Ingredients
- 1 large sweet onion, chopped
- 1 green poblano pepper, diced
- 3 tbsp Guajillo chili powder
- 5 green onions, chopped
- 4 red, green, and orange sweet peppers, diced
- 1 cup beef broth
- 1 jar Chilau Stew Base
- 2 (28 oz) cans crushed tomatoes
- 2 (15 oz) cans red kidney beans, drained
- 3 lbs ground beef
Preparation
- Heat a large pot over medium-high heat. Season ground beef with Salt pepper, chile powder and cook until brown. Remove and drain
- Sauté the sweet onion, poblano pepper, sweet peppers, and green onions until softened.
- Stir in the Guajillo chili powder and continue to sauté
- Pour in the beef broth and your chosen amount of Chilau Stew Base and crushed tomatoes, mixing well.
- Add drained kidney beans and bring the chili to a gentle boil. Reduce heat and let simmer for 30 minutes.
- Taste and adjust seasoning with salt and pepper.
