This recipe makes an 8-quart pot, perfect for feeding 8-10 people. For a smaller batch, halve the ingredients for a 4-quart pot. 

Ingredients

  •  1 large sweet onion, chopped
  • 1 green poblano pepper, diced
  • 3 tbsp Guajillo chili powder
  • 5 green onions, chopped
  • 4 red, green, and orange sweet peppers, diced
  • 1 cup beef broth
  • 1 jar Chilau Stew Base
  • 2 (28 oz) cans crushed tomatoes
  • 2 (15 oz) cans red kidney beans, drained
  • 3 lbs ground beef

Preparation

  1.  Heat a large pot over medium-high heat. Season ground beef with Salt pepper, chile powder and cook until brown. Remove and drain
  2. Sauté the sweet onion, poblano pepper, sweet peppers, and green onions until softened.
  3. Stir in the Guajillo chili powder and continue to sauté
  4. Pour in the beef broth and your chosen amount of Chilau Stew Base and crushed tomatoes, mixing well.
  5. Add drained kidney beans and bring the chili to a gentle boil. Reduce heat and let simmer for 30 minutes.
  6. Taste and adjust seasoning with salt and pepper.

For a spicier kick, add a little more Chilau Boil Base. Serve hot with your favorite toppings—shredded cheese, sour cream, or green onions—and enjoy a dish that’s hearty, bold, and customizable for any heat level.
